Tapioca Pudding

Tapioca Pudding

Makes 10 (1/2 cup) servings


1 cup tapioca
2 cups water
2 cups 2 percent milk OR (soy milk or rice milk)
cup sugar
3-4 strands of saffron, powdered
1 tablespoon raisins
1 tablespoon ghee
10 cashews


1) Wash tapioca.
2) Soak tapioca in 2 cups water for 15 minutes.
3) Bring water and tapioca to a boil, reduce heat, and simmer for about 10 minutes or until almost completely cooked.
4) Add milk, sugar, saffron and raisins to the tapioca, and allow mixture to come to a boil. Reduce heat and simmer another 10 minutes or until completely done. Remove from heat
5) Place a serving of tapioca pudding in each dessert cup and refrigerate for about hour.
6) In a separate pan, heat the ghee. Stir-fry the cashews in ghee until golden brown.
7) Garnish each cup of pudding with a cashew on top before serving. .
